Japanese Miso Salmon Soba

Ingredients for 3 servings

  • 540 g salmon fillet
  • 225 g dry soba noodles
  • 300 g edamame
  • 300 g pak choi
  • 300 g carrot
  • 60 g miso paste
  • 20 g ginger
  • 4 spring onion

Instructions

  1. Prep the ingredients: chop the vegetables, prepare the garlic and set out all seasoning before you start.
  2. Cook the soba noodles in salted water following the packet time. Drain, reserving a small splash of cooking water.
  3. Season the salmon and pan-cook or bake it until it flakes easily.
  4. Soften the garlic and vegetables in the same pan. Add Miso ginger dressing and simmer until the vegetables are tender.
  5. Return the protein to the pan, toss through the cooked carbohydrate and sauce, then taste and adjust seasoning. Divide into 3 labelled portions, cool promptly, then refrigerate.
